Blueberry season is here and it’s time to enjoy the blueberries that you pick or buy from the farm stand! We know that our blueberries taste great on their own, but it can also be fun to use them in recipes. If you don’t have time to pick your own, we have fresh blueberries available in our farm stand. Here are some recipe ideas on how you can use your freshly picked blueberries:
Blueberry Shortcake
We have fresh scones in our bakery, so while you’re here, pick some up as a base for your strawberry shortcake! Take 2 cups of blueberries (washed) and place in a bowl. Toss with 1 teaspoon lemon juice, 1/2 teaspoon of vanilla extract, and 3 tablespoons of granulated sugar. Let stand for 15-30 minutes. To serve, place 1 scone in each serving dish. Top with blueberry mixture and whipped cream.
Blueberry Mocktail
This fun mocktail recipe really draws attention to the rich, sweet flavor of the juicy blueberries. Take 1/3 cup blueberries and place them in a large glass. Add 4 fresh mint leaves, 1 tablespoon lemon juice, and 1-2 tablespoons of honey, maple syrup, or sugar syrup. Gently muddle with a muddler or the back of a wooden spoon until the berries release their juice. Add ice to the glass, top with sparkling water of soda water, and stir. Serve immediately. If you want to turn this into a cocktail, top it with champagne instead of soda water.
Blueberry Goat Cheese Salad
Blueberries make an excellent addition to salads, and pair well with ingredients like goat cheese and balsamic vinegar. You can make as much or as little of this as you need. Add greens of choice into a serving platter. Arugula tastes particularly good in this salad, but any greens would work. A mixture of baby spinach and arugula is also nice. Top with blueberries, goat cheese, and chopped walnuts or pecans. Add balsamic vinaigrette just before serving.
Easy Blueberry Ice Cream
This blueberry ice cream doesn’t require an ice cream maker. Once you stir the ingredients together, all you need to do is freeze and serve! Add 1 1/2 cups blueberries to a bowl and toss with 1 tablespoon sugar. Let stand 15-30 minute, or until the blueberries release their juices. Mash the blueberries with a wooden spoon after it sits. In another mixing bowl, add 2 cups of whipping cream and blend until stuff peaks form. Beat in 1, 14 ounce can of sweetened, condensed milk and 1 teaspoon vanilla extract. Gently fold in the blueberry mixture (juice and berries) until well combined. Transfer to a freezer safe container and freeze for 6 hours or overnight. Remove from freezer, let it sit on the counter for 10 minutes, and serve.
