Desserts to Make with Fresh Strawberries for Barbecues
Strawberry season is here, which means that it is time to use all those strawberries you pick your self and buy fresh from our farm stand at Parlee Farms! We know our strawberries are delicious by themselves, but they also taste great in some of our favorite dessert recipes. It’s also barbecue season, so we thought we’d share some strawberry desserts that make a great addition to any barbecue:
Strawberry Shortcake Trifle
To make this recipe, it will be easier if you have a large trifle dish to assemble it. This recipe uses an angel food cake, but you can also use sponge cake instead. Cut an angel food cake into 1-inch cubes. Place the cake in a small layer at the bottom of a trifle dish. Top with some fresh, sliced strawberries. Place some vanilla pudding over the strawberries and top with whipped cream or Cool Whip. Repeat with another layer of cake, then strawberries, then pudding, and then whipped cream. Keep repeating layers until you run out of ingredients or you run out of room in the dish. Always make Cool Whip or whipped cream your last layer. You can make this a few hours in advance of your party, and keep refrigerated until you’re ready to serve it.
Strawberry Upside Down Sheet Cake
Follow the package directions for a box of yellow or vanilla cake mix. Spray a 9 x 13 pan with cooking spray and line with cleaned and sliced fresh strawberries (you’ll need roughly half a pint). Sprinkle the strawberries with granulated sugar. Pour cake mix over the cake and follow package instructions for baking. Let the cake cool all the way through after it comes out of the oven and turn over onto a serving tray large enough for the cake.
Strawberry Ice Cream Cake
Place 40 vanilla wafer cookies into a large zip-loc bag, seal the bag, and crush the cookies with a glass or rolling pin. Line a 9-inch springform pan with parchment paper. Pour the cookie crumbs into the pan and top with a stick of melted butter. Press the cookies in until a crust forms. Spread 1/2 a quart of vanilla or strawberry ice cream that had been softened for about 20 minutes or so on the counter into the springform pan. Wash, clean, and slice 1 pint of fresh strawberries. Place on top of the ice cream. Top 1/2 a quart of ice cream on top of the strawberries and top with rainbow sprinkles. Cover with parchment or wax paper and freeze for at least an hour before serving.
