Delicious Fourth of July Recipes Using Our Fruit!

With the 4th of July Holiday fast approaching, we thought we’d put together a fun collection of recipes that use our pick your own fruit! Not only that, but these are great summer recipes you can serve not only during Independence Day, but also for your summer barbecues.

You can come to the farm and either buy the fruit freshly picked from our farm stand or pick your own. Just be sure to check our website for information about our hours and what we have available before you come. Here are the recipes:

Fresh Cherry Salad

Arrange 4 cups mixed greens on a serving platter. Top with 2 cups of fresh cherries that have been pitted and halved. To finish off the salad, sprinkle 1/4 of a chopped, fresh red onion over the cherries (optional), and 1/2 cup crumbled goat cheese on top of that. Garnish the salad with 2 tablespoons of chopped, fresh parsley and serve with a vinaigrette dressing (store bought is fine).

Fresh Cherry Marinade (Use for Grilled Meat)

Another fun way to use those fresh cherries is to turn it into a homemade marinade for meats! You can use it for any meat you want, such as chicken, pork, or steak. Add the meat to a plastic bag, pour in some of the marinade (eyeball it), and then let it marinate for two hours (but overnight is best). Then remove the meat from the bag, blog out the excess marinade with a paper towel, and grill the meat as you normally would.

To make the marinade, add the following ingredients to a blender of food processor and pulse until smooth: 1 cup fresh cherries, pitted and halved, 1/4 cup vinegar of choice, 1/4 cup olive oil, 2 tablespoons soy sauce, 2 tablespoons honey, 2 cloves of garlic (minced), 1 teaspoon mustard.

Easy Blueberry Cake with Fresh Blueberries

Here in New England, blueberry cake is a staple of summer barbecues! This one is easy to put together and uses boxed cake mix. Rinse your blueberries well in advance so they are dry by the time you make this recipe. Add 1 cup of fresh (dry) blueberries to a small bowl and toss with 1 tablespoon sugar. Set aside. Prepare a white or yellow boxed caked mix according to the package instructions. Gently fold in the blueberries. Pour into a greased cake pan (see what the package directions recommend for this step) and then bake according to the instructions on the package.
